Breakfast can be SO simple, there is enough time to get in the nutrients you need to get you through your busy day. Just simply make it to-go!

 

Here is one of my FAVORITE to-go recipes that’s loaded with antioxidants, protein and healthy fats that will keep you full for longer and add a bunch of cell repairing chemicals that prevent disease.

And it only takes 5 minutes to make!!!

Overnight Vegan Vanilla Chia Pudding

BERRIES

Berries are a good source of fiber, which may increase feelings of fullness, as well as reduce appetite and the number of calories your body absorbs from mixed meals.

And adding them to a smoothie like this one is the perfect way to pack in all their health benefits!

COCONUT

Rich in fiber and MCTs (Medium Chain Triglycerides), coconut may offer a number of benefits, including improved heart health, weight loss, and digestion. Yet, it's high in calories and saturated fat, so you should eat it in moderation. Overall, unsweetened coconut meat makes a great addition to a balanced diet.

Your body metabolizes MCTs differently than other types of fats, absorbing them directly from your small intestine and rapidly using them for energy.

CHIA

Despite their tiny size, chia seeds are one of the most nutritious foods on the planet. They’re loaded with fiber, protein, omega-3 fatty acids and various micronutrients. The perfect addition to this smoothie.

Plant-based and delicious breakfast that you can have ready to go in less than 5 minutes

Ingredients

  • 1 cup frozen berries
  • 2 scoops of your favorite protein powder (I like @sproutliving as they are super clean and vegan)
  • 1 cup of unsweetened alternative milk (almond or coconut are great)
  • 1/2 cup coconut yogurt (unsweetened)
  • 1/2 tsp cinnamon 
  • 1 cup of spinach or greens like kale
  • 1 Tbsp chia seeds

Instructions

  1. Place all ingredients in a blender.
  2. Blend on high for 2 minutes or until all ingredients are combined.
  3. Serve in a to-go container.
  4. Enjoy!
