I love red velvet cake, but I don’t love that, normally, it’s made with artificial color. 


Finding ways to add more plant-based foods into our diets is one of the things that I really enjoy doing. I also love a sweet treat. So this got me thinking of recreating an all-natural plant-based red velvet as an energy elixir.


I got to play in the kitchen (with my food science hat on) and something amazing and delicious was developed.

This dairy-free energy elixir is super tasty with the perfect red velvet chocolate flavor, creamy and frothy, and the chocolate rim on the cup melts while you sip.

I promise you, it won’t disappoint!

Before we get to the recipe let’s talk about some of the benefits of the ingredients in this delicious dairy-free treat.

Nutrition Tips:

BEET POWDER

First and foremost: don’t worry if you don’t like beets, you can’t taste them at all, but they do add a beautiful natural red/pink color and amazing health benefits.

They are packed with essential nutrients, are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.

Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.

Many of these benefits are due to their high content of inorganic nitrates.

CACAO POWDER

One of my favorite superfoods. Cacao was first developed as a crop in many ancient South American cultures, with the Aztecs and Mayans being the most well-known of these indigenous populations.

It contains a wide variety of powerful antioxidants and the potential to improve several important risk factors for disease (heart disease, improve brain function and blood flow, etc). And it has the added benefit of tasting amazing!

COLLAGEN POWDER

Collagen is the most abundant protein in your body. It is the major component of connective tissues that make up several body parts, including tendons, ligaments, skin, and muscles.

From improving skin health, relieving joint pain (taking collagen supplements has been shown to reduce inflammation and stimulate collagen synthesis in the body), to improving heart health and boosting muscle mass its intake is also being studied for its benefit on the strength of your hair and nails and for gut health and preventing leaky gut syndrome.

Monk fruit

Monk fruit is a small, green gourd that resembles a melon. It’s grown in Southeast Asia. The fruit was first used by Buddhist monks in the 13th century, hence the fruit’s unusual name.

Fresh monk fruit doesn’t store well and isn’t appealing. Monk fruit is usually dried and used to make medicinal teas. Monk fruit sweeteners are made from the fruit’s extract. They may be blended with dextrose or other ingredients to balance the sweetness.

Monk fruit extract is 150 to 200 times sweeter than sugar. The extract contains zero calories, zero carbohydrates, zero sodium, and zero fat. This makes it a popular sweetener alternative. Unlike some artificial sweeteners, there’s no evidence to date showing that monk fruit has negative side effects

A delicious good-for-you red velvet beverage, with the perfect chocolate flavor and it's dairy-free too!

Ingredients

  • 2 tsp beet powder
  • 2 tsp organic cacao powder
  • 24 oz almond milk
  • 10g collagen powder
  • 1 tsp coconut oil
  • 2 tsp monk fruit sugar
  • 1 oz melted dark chocolate to decorate the cups

Instructions

  1. Warm up the milk.
  2. Put all ingredients but the melted chocolate in the blender. Hold the lid tight and blend. (Be careful because the heat can push the lid out).
  3. Decorate the mugs- with a spoon spread the melted chocolate around the rim of the mugs. Don't worry if it spills, it is part of the look :).
  4. Serve and enjoy!
