Mandarin Almond Gluten Free Cake

This Mandarin Almond Cake is naturally gluten-free and packed with beautiful flavors from the Mediterranean as well as the health benefits from the ingredients.

Are you ready for the most delicious and moist cake? It is Gluten-Free, Kosher for Passover and you can make it Keto-Friendly too!


Spring is here!!! The birds are singing, the flowers are coloring the streets and hills around my house and the air smells clean and fresh. There is a really special energy of renewal which I absolutely love.


It is also Passover for us, which means bringing our family together to enjoy some traditional foods and recipes that I have been modifying and improving on throughout the years. 


As you may know, during Passover we are not allowed to eat any leavened bread or grains that could have been in contact with water and become “not kosher” for Passover (as they could have fermented) such as wheat, barley, rye, spelt and oats. 


The cool thing is that this restriction has allowed for the creation of super yummy recipes that are gluten free in nature. One of my favorites is a Mandarin Almond Cake. 


Originally it was made with oranges, but we have a mandarin tree which this year gave us so much delicious fruit that I just had to change it up. And it turned out super yummy. It just feels like the minute you eat it you can be transported to Spain and be among olive groves and orange trees…traveling through food I call it.


Moreover, it is super easy to make and has only 5 ingredients with lots of health benefits. 


And this year, I ran out of sugar, so instead I used a Truvia Brown Sugar substitute because it was all I had at home. I rarely bake with sugar alternatives and stevia is not my go-to, but I have to say, this one works! And voila, a Keto-Friendly recipe was born


So if you or someone in your family has high blood sugar, any pre-diabetic conditions or just likes to lower their sugar intake you can use this too. In the end the cake turned out gluten-free, dairy free, sugar-free, keto friendly, kosher for Passover AND most importantly super moist and delicious.

Nutritional Benefits

Almonds

The magnesium in almonds may additionally help lower blood pressure levels.

They can also lower cholesterol levels. reduce hunger and promote weight loss. All in all an amazing food to add to your diet.


Mandarins

Mandarin oranges have even more beta-carotene and beta-cryptoxanthin than common oranges, making them excellent additions to your diet. The body turns beta-carotene and beta-cryptoxanthin into vitamin A, which is essential for a healthy immune system, good vision, and normal growth and development.
