Spiced Whole Roasted Cauliflower

Most of us are used to picking our main meal based on a protein (fish, chicken, beef, etc.) and then we add sides to it.

BUT — we all know we should be eating more plant-based meals for all their amazing benefits:

  • Support your immune system

  • Reduce inflammation

  • Maintain a healthy weight

  • Help keep your gut healthy (which is key for overall health)

  • Reduce the risk of cancer, heart disease, stroke, diabetes and some mental health illnesses.

If you want to learn more on the benefits of eating more plant-based meals and how to add them to your daily life check out my blog on How to include more plant-based meals in your diet.

Super easy and ready in just five simple steps, you can make this the center of your plant-based meal and you won’t miss the meat (I promise!)

Ingredients:

  • Whole medium size cauliflower
  • ½-1 Tbsp Olive oil- enough to cover the cauliflower
  • Salt- to taste
  • Black pepper – freshly ground to taste
  • ½ tsp- 1 tsp Turmeric (depending on the size of your cauliflower)

Instructions:

  1. Heat your oven to 400 F.
  2. Remove the outer leaves and rinse the cauliflower.
  3. Pat the cauliflower dry with a paper towel or a clean cloth
  4. Place it on an ovenproof tray/dish and add olive oil, salt, black pepper and the turmeric (I really like Turmeric for its’ anti-inflammatory benefits and it tastes super yum!) (Top tip- the black pepper helps potentiate the positive benefits of the curcumin in the turmeric by 2000%- AMAZING RIGHT?!)
  5. Put it in the oven for about 30 minutes or until roasted.

Notes:

Serve it with a nice arugula salad and some tahini or Greek yogurt with mint. Super easy and delicious!
